What is a cocotte dish?
Cocotte is the French term for what is also known as a French Oven or Dutch Oven. A cocotte dish is an enamelled cast-iron cooking pot that can be used for braising, baking, stewing, frying, sautéing and boiling. It’s similar to a casserole dish, but not quite the same, since casserole dishes may not be suitable for stove-top use. A cocotte dish is usually made from cast iron, whereas casserole dishes can be made from a variety of materials, but are often ceramic. The very first cast-iron cocotte designed by Francis Staub was made in the Alsace region in 1974 and Staub has since gone on to become the cookware brand of choice for many professional cooks and celebrity chefs. Culinary giant Claude Bosi is a fan, and Staub cookware is used by around half the Michelin-starred chefs in France.
The latest Staub cocotte
Staub recently added Sage to its collection of cocotte colours. The lids have a unique matt black underside, featuring tiny spikes that collect and distribute flavour-filled condensation evenly (Staub calls this ‘Aroma Rain’), creating moist, tender dishes with no loss of flavour.
Staub cocottes can also be used as lidless pans on all types of hob, including induction models. Not only are they heat-resistant up to 240°C, they are also cold resistant up to -20°C, so they can be used in the freezer.
